Manchow Soup


This is Manchow Soup. It's known as an Indo-Chinese Cuisine. I think this is because it is a chinese recipe with an Indian touch to it. Manchow Soup originated in Meghalaya, although I have made it vegetarian. If it counts for anything, my daughter loves this soup a lot! This is my comeback recipe on this blog after 8 years! Hope you guys like it!

Ingredients: 
For Soup:

  • 2-3 teaspoons of olive oil
  • 3-4 cloves of garlic chopped finely
  • 1 teaspoon of finely chopped ginger
  • 1/4 cup of finely chopped onions
  • 1/4 cup of finely chopped green/spring onions
  • 1/4 cup of finely chopped beans
  • 1/4 cup of cabbage, vertically chopped
  • 1/4 cup of finely chopped carrots
  • 1/4 cup of finely chopped capsicum 
  • 1 teaspoon of black pepper powder
  • 1 teaspoon of soy sauce
  • 3 cups of water
  • 2-3 green chilies finely chopped
  • 1 cup of chopped tomato
  • Finely chopped coriander leaves for garnish
  • 1 teaspoon of vinegar
  • 4 teaspoons of corn starch dissolved in 1/4 of water
  • Salt as per taste
  • 1 teaspoon of Ching's Green Chili Sauce 
  • 1 teaspoon of Ching's Red Chili Sauce
For Fried Noodles:
  • 1 cup of cooked hakka noodles
  • Oil for frying
 Procedure:



                                                                                                            Thoroughly wash all the vegetables.
Chop them and keep it ready for further use.          
Take a big pot and pour oil into it.
Once the oil is hot, put in the chopped ginger, garlic, and green chilies.  
Saute for 2 minutes.                






             

Add the onion, tomatoes, and fry for 2 minutes.
Now add the finely chopped beans, cabbage, and carrots.
Saute for 5 minutes.
Finally add the cut capsicum.
Cover the pot with its lid, and let the vegetable cook for a few minutes. 





Add black pepper powder, soy sauce, vinegar, salt, the 2 sauces.
Mix properly.
Add 3 cups of water, and let the stew boil for 10 minutes with a lid. 
Stir in between. 



                                                 


Add corn starch paste. Stir properly so that the lumps are gone. 
Let it boil nicely for 10 to 15 minutes.
Finally, garnish the soup with green onion and coriander leaves. 
Then, let it boil for 5 more minutes, and you have the soup. 
When the soup continues to boil, prepare the fried noodles. 
Cook the noodles as per the packet's instruction. 
Drain it and let it cool.
Take the oil for frying. Once the oil is hot, start putting few strings of noodles into it. Fry with medium flame. 
Serve the hot Manchow Soup garnished with these fried noodles on top. Enjoy!
