Spice Rice Dish [Maharashtrian recipe]-----------Gobi Bhath/ Masala Bhath

This is very famous,tasty and spicy dish in Maharashtrian recipe.As the name only suggest that it make use of lot of masala.its masalas are little different which makes it taste little different from the normal pulav.We can use vegetables like pulav but normally for this we use onion,cauliflower and peas.When we were kids we used love this rice dish.My neighbour aunty used to prepare very tasty masala bhath.In Maharashtra this is a must dish in their all weddings and functions.After i grown up i learned this recipe from my sister who is expert in maharashtrian recipes.In all maharashtrian recipe the gram masala they use is little different from the normal garam masala,that is kala masala/goda masala.one more masala is used in this recipe which we are going to prepare first.
So here is the Masala Bhath recipe including all the masala powder recipe.enjoy.
Ingredients :
  • 1 cup basmati rice/ sonamasuri rice
  • 1  onion cut lengthwise
  • 1 cup full cauliflower florets(washed,cleaned and cut into big pieces,if cauliflower is not clean one then better put in hot boiling salted water and cook for 3 minutes)  
  • 1/4 cup peas
  • 1 tsp ginger chopped
  • 1-2 green chilies cut lengthwise
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • salt
  • jaggary
  • seasoning
  • 1 tbsp oil
  • 1 bay leaf cut into pieces
  • 3-5 curry leaves
  • 1/2tsp mustard seeds
  • 1 tsp cumin seeds
  • 2 tsp groundnuts/peanuts(can add cashews)
  • pinch of Hing(asafoetida)
  • for masala bhath  powder:
  • 2 tsp coriander seeds
  • 1 tsp cumin seeds
  • 1" cinnamon stick
  • 2-3 lavang(clove)
  • 1 tsp godh masala/kala masala powder:
  • 7-9 red chili whole
  • 1.5-2 tsp coriander seeds
  • 1 tsp dry grated coconut
  • 1 tsp sesame seeds
  • 1 bay leaf
  • 1 stick of cinnamon
  • 3 black pepper
  • 1 javetra
  • 1.25 tsp onion fried(optional)
  • Garnishing
  • coriander leaves
  • lemon juice
  • 1-2 tsp ghee
Method:
First of all prepare all masala's before hand.
for masala bhath powder dry roast all the ingredients together and dry ground them into smooth powder.
For godh masala first dry roast sesame seeds and coconut together and roast till color turns red and remove from pan.Now add few drops of oil and roast coriander seeds till it turns brown color and then remove from pan and keep it aside.similarly adding little drops of oil roast all the ingredients separately till its color changes.
Now dry ground everything together into smooth powder in blender/coffee grinder without adding water.

Masala Bhath Recipe:
Take pan pressure cooker put oil and all seasoning when mustard start sputtering add onion ,ginger,green chilies,turmeric powder,red chili powder and stir till onion turns red color.
now add peas,cauliflower,salt,jaggary and all masala powder and stir them properly.
Add water according to their measure and close the lid of cooker and put whistle on it.let it cook for three whistle only.
After the cooker is cooled down remove the lid and garnish with coriander leaves,lemon juice and ghee.
Serve hot with onion raita.
