North Indian cusine-----Sarso ka sagh

Sarso ka sag is a popular curry in punjabi cuisine.The combination sarso ka sag , makai ki rotti and thandi lassi is very famous though. Sarso means mustard as we all know and makai means corn in punjabi.
This curry is prepared with sarso that is mustard leaves.
My friend pooja always used to prepare this curry.so once i thought of giving a try and made authentic punjabi meal by preparing Sarso ka sag and makai ki rotti.the result was quite good ,so here is the recipe i am sharing,enjoy.....

Servings:3-4 persons

Ingredients:
1 big bunch /2 small bunches of mustard leaves
1/4 bunch palak(spinach)[optional]
1 big onion finely chopped
2 medium tomato chopped
1-2 green chilies chopped
2 " ginger chopped
3-4 garlic pod chopped
salt to taste
1/4 tsp sugar
1 tsp lemon juice
2 tsp corn /gram flour
Seasoning:
3 tbsp ghee/butter
1-2 red chili whole broken into pieces
1 tsp cumin seeds
Masala:
1/4 tsp turmeric powder
1 tsp Gram masala(optional)

Method:
Clean ,wash and finely chopped sarso(mustard) leaves and palak leaves.
Finely chop onion,ginger,garlic and tomatoes.
Take a wok put water and bring it to boil.add little salt,oil and put chopped leaves in it.
let it boil for 6-8 minutes till leaves are completely cooked.
When it is cooled off blend it into smooth paste using blender or hand whisk.

Take a pan add butter,cumin seeds and red chilies.when cumin seeds turns brown add ginger,garlic and green chilies,stir them for 1 minute.now add onion and stir fry till onion turns red color.
Now add turmeric powder,sugar and tomatoes and stir them for 2-3 minutes.
When tomatoes are cooked properly add salt,cooked and mashed greens and garam masala in it.
Stir them and let them simmer for 3-4 minutes.
Finely add corn or besan and keep stirring for 2-3 minutes.
Garnish with lemon juice and butter.
Serve hot with Makai Ki Rotti topped with butter.
