North Indian Cusine-----Pudina ( Mint) / Pudina-Methi Rice

This is very simple ,easy and healthy type of rice.Taste good as well.You can prepare this rice using only pudina or along with pudina palak or methi can also be used.Pudina gives excellent flavour to the rice.
Can also add matar(peas), but somewhat i prefere without.And its a best way of feeding greens to kids.

Serving: 3-4 persons

Ingredients:

  • 2 cup Sonamasuri Rice
  • 4 cup water
  • 1 big onions cut lengthwise
  • 1-2 green chilies
  • 1 tsp ginger chopped
  • 1.5 tsp crushed whole garam masala like (clove,cinnamon,cardamon,bay leaf,cumin seeds)/ garam masala powder
  • 1/4 tsp turmeric powder
  • salt
  • lemon juice
  • seasoning:
  • 1 tbsp ghee/butter/oil
  • 1 tsp cumin seeds
  •  2 tsp cashews
  • 1/2 bay leaf
Method:

Clean,wash and chop mint leaves(if methi or palak is using chop them too).
Cut all the vegetables.
Take a pan add ghee and all seasoning.when cumin seeds turns brown add ginger and green chilies and stir them for 1 minute.
Now add onion,turmeric powder and stir them till onion turns translucent.
Then add pudina ( also methi or palak if using ) and stir for 1 minute.now add salt,garam masala and stir them for 1 more minute.
Finally add washed rice and stir properly so that all masala's are mixed properly.Add required water and pressure cook or steam cook this rice.
When the rice is cooked sprinkle lemon juice.
Serve hot with any type of riatha.
