Soft Taco and Seven Layer Buritto

This is a Mexican dish and as my daughter loves one i make once in a while.I really think its a very healthy sort of a dish and when we prepare it at home we can make more healthier.It requires little more ingredients and has to plan early to make it.but i feel once in a while worth trying .I learned his from my husbands chikki,my aunt. I make it little Indianized version of this.enjoy.
Ingredients:
For this we required three homemade spread.
ingredient for 1st spread :avocado sauce:
1 Avocado
1" ginger chopped
coriander leaves
3-5 green chilies
salt
little sugar
lemon juice
1 tsp avocado masala(store bought)
Method:
Wash,peel and cut big pieces of avocado discarding the seed inside.
Grind together avocado and all the ingredients together into smooth paste.

ingredients for 2nd spread:  Salsa:
1/4 cup tomato ketchup
1 tomato cut into small pieces
1/2 capsicum cut into small pieces
1/4 onion cut into small pieces/chopped
salt
sugar(optional)
1tsp red chili powder
coriander leaves finely chopped
Method:
Mix together everything and then just for 1 minutes heat it in microwave.stir properly.
you can skip the step of heating also.

ingredients for 3rd spread:  Beans sauce:
1/4 cup red beans/kidney beans soaked in water overnight
2-3 tsp Taco seasoning(hot/mild)
2" ginger chopped
1 tsp red chili powder
1/2 tsp lemon juice
salt
Method:
Soak red beans overnight in water and next day Cook it in pressure cooker.It should be cooked properly.
Smash this beans with the help of ladder.take a pan add oil,taco seasoning,ginger and stir for few seconds.
Now add smashed cooked beans,salt and red chili powder.stir properly for 2 minutes ,water should be drained completely.finally add lemon juice.

Other ingredients needed for Soft Taco:
1 packet of soft taco(i prefer flour one)
1 small box of sour cream
 taco sauce (hot/mild)
1cup shredded cheese/Taco cheese
Mixed vegetables like
finely chopped 1cup lettuce
finely chopped 1/2 cup onion
finely chopped 1/2 cup tomato

Method of preparing Soft Taco:
Before hand prepare all the spread.Cut all the vegetables keep it ready.
The time of preparing taco keep everything at one place.
Heat the griddle,when it become hot put the soft Taco on it.you can apply some butter/oil  on both sides if you want.
When it is nicely cooked/brown puffs seen turn over and make the heat low.
Now spread 1-2 tsp of Beans sauce evenly over the taco.
Next spread 1tsp salsa over the taco,2tsp then lettuce  ,1tsp onion and tomato.
Next comes 1tsp avocado spread,1tsp sour cream.
Finally sprinkle cheese and 1tsp of taco sauce.
try to make a wrap like masal dosa.
Serve this with taco sauce.

7 Layer Burrito:
Here only addition is Mexican rice.for this you need 1cup cooked rice,1/2 tsp garlic chopped ,salt and 2 tsp taco seasoning.take a pan add oil,when oil is hot add garlic .when garlic turns light brown add taco seasoning salt and cooked rice.stir it properly and simmer for 1 minute.
Same way on hot griddle put soft taco,spread one by one the spread/chutney as above addition here is rice spread  and all other procedure is same.
serve hot with some taco sauce.
