Ajethna/Thal[Mangalore Cuisine]---------- Mixed Vegetable Dry curry

This is very easy and healthy mixed veg curry.But really tastes good and goes well with rice and chapatti too.
  • 1 cup French beans cut into small pieces
  • 1 cup carrot  cut into small pieces
  • 1 cup potato cut into small pieces
  • salt
  • jaggary
  • 1-2 green chilies cut lengthwise
  • Masala
  • 2-4 red chilies
  • 1/4 tsp mustard seeds
  • 1/4 cup fresh grated coconut 
  • seasoning
  • 2 tsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 1/4 tsp hing(asafoetida)
  • curry leaves
  • 1 red chili broken into pieces
Wash,clean and cut all vegetable.peel and cut potato and carrot into small pieces .Cut french beans into small pieces .
After the vegetables are cut cook them together adding little salt,green chilies,little turmeric powder and jaggary in pressure cooker/microwave.
Dry grind red chilies,mustard seeds and coconut together.what i do is first grind red chilies and mustard together in coffee grinder and then grind it with coconut in blender(as i have this juicer blender).the main purpose of doing that is that while grinding very negligible amount water should be used.

Take a pan add oil and all seasoning ingredients.when mustard start spluttering add mixed vegetable ,turmeric powder,salt,grounded masala and stir them properly.let it simmer for 3-4 minutes so that all water evaporate and masala is cooked and mixed properly.
Stir in between otherwise it will be burned at the bottom.
Serve hot with hot plain rice or chapatti's.
