North Indian cuisine------Veggie Kofta

This recipe can be done many ways.My mom used to prepare very tasty kofta curry and she used to prepare cabbage koftas(sort of fried bondas) for that.One day i tasted this veggie koftas in my friend pooja's house.So as i always mention that its very hard to make kids eat all sort of vegetable, i thought why not try this recipe in which we can use all the vegetable .So i combined both recipes and made this version.It turned out very well.
Ingredients:
For Koftas:
  • 2-3 cups of mixed vegetables,for this i use
  • 1-2 potatoes boiled
  • 1 cup cabbage finely chopped
  • 1/4 cup kaddu/pumpkin grated
  • 1-2 carrot grated
  • 1/4 cup beans finely chopped and cooked(optional)
  • Zucchini grated
  • 1/4 cup Cauliflower grated
  • 1/4 cup cooked peas
  • 1/2 cup Besan(Gram flour)
  • salt
  • 1/2 tsp jeera powder
  • 1/2 tsp turmeric powder
  • 1 tsp chat masala
  • 1-2 tsp red chili powder
  • Hing powder
  • oil to fry
For Gravy:
  •  1 big onion finely chopped
  • 1/2 tsp ginger finely chopped
  • 1/2 tsp garlic finely chopped
  • 2 big tomatoes /1 cup of tomato puree
  • 1/2 cup whole milk
  • 1/4 cup curd
  • 1 tsp butter
  • 1/2 tsp turmeric powder
  • 1-2 tsp red chili powder
  • 1/2 tsp coriander powder
  • 1 tsp garam masala powder
  • coriander leaves
  • lemon juice(optional)
  • seasoning
  • 2 tsp oil
  • 1/2 tsp jeera(cumin seeds)
  • salt
  • sugar
Method:
method for koftas:
Wash,peel and grate carrot,pumpkin,zucchini and cauliflower.you can also grate potatoes,but i prefer boiled one.After grating all the vegetable,mix them and squeeze all the water from it.now cut cabbage and drain water completely.If you can grate cabbage also then that is also ok.

Finally add all this grated vegetable,cooked peas and potatoes and mix properly.Try to mash these vegetables.Now add all the masalas and salt in it.Finally add gram flour little by little .the important pat here is the vegetables should not contain any water.gram flour should be added just enough to bind them together.


Make small golf size balls of these mixer .
                                                                                                                      Deep fry these in batches into golden brown koftas.Drain and remove it on the kitchen paper towel.


Now for gravy:


Heat a pan,put oil and jeera.when it is brown add onion,ginger and garlic.stir fry for 1 minutes.now add turmeric powder,red chili powder,coriander powder and stir continuously till onion turns red.
Now add tomato puree,cashew paste,salt and sugar.stir for 2 minutes or till oil start separating.
Now add milk and let it simmer for 2-4 minutes till gravy start thickening.now add curd,garam masala and let it simmer for 2 more minutes.

see the consistency and accordingly add water.finally add koftas and butter.now let this gravy and koftas cook together for 3 minutes.switch off and garnish with coriander leaves.if you need you can sprinkle little lemon juice on it.Serve this tasty gravy with rotti's,Nan ,Chapati's,Phulkas etc.enjoy!
