Sichuan Vegetable Fried Rice

Actually i wanted to prepare a Chinese meal and wanted a combination which goes well with Gobi Manchurian.When i was searching i came across this very simple,tasty and obviously filling dish.

here in the photos of ingredients gobi manchurian ingredients are also there.
  • 1 cup Rice
  • 2 Spring onion
  • 1" ginger
  • 4-6 Cloves garlic
  • 1 medium carrot
  • 4-6 french beans
  • 1/4 cup cabbage (optional)
  • 1/4 capsicum(optional) chopped
  • 3-4 red chillies whole
  • 4-6 tbsp oil
  • 1 tbsp chilli paste
  • 1/4 tsp ajinomoto(optional)
  • 1/4 tsp white pepper powder
  • salt
  • 1 tbsp vinegar
Clean wash and soak rice in four to five cups of water for an hour.
Cook the rice adding little less water so that rice is cooked flaky not sticky.
remove and cool the rice.
Wash ,trim and finely chop spring onions,keep aside little for garnishing.chop ginger and garlic.

Wash,peel and finely chopp carrot,chop beans and cabbage.break red chilies into two.

You can buy store brand one ,but making at home is not very difficult.i made little changes and skipped 1 or two thing but that is ok.
In any thai gravy's you can add this and it gives very good flavour .this quantity i am giving below is for one large gravy/ can make according to your need.

1 shallot/purple/any onion
1 stalk lemon grass finely chopped(optional)
1-2 red chili
4 cloves garlic
1"ginger chopped
2 tbsp tomato ketchup
1/2 tbsp ground cumin
1 tsp coriander powder
1/4 tsp pepper powder
1 tsp soy sauce
salt to taste
2 tbsp lemon juice
1/4 can thick coconut milk
1/2 tsp cinnamon
1 tsp sugar
1-2 tsp chili powder
1 tbsp golden mountain sauce(optional)
Place all ingredients in blender and process well to make a smooth thai red curry this point it is little stong but mellows well with the rice and gravy. 

Heat oil in a pan ,add  broken red chilies,chopped garlic,ginger,spring onions and stir fry for 2 minutes.
Add carrot,beans,cabbage  and continue to stir fry for a minute.add red chilli paste,ajjinomote,white pepper,salt and mix well.

Add rice and cook on high heat for a minute or until the rice is heated through,tossing continuously.Mix in vinegar and serve hot,garnished with chopped spring onion greens.
