Maharashtrian Cuisine--------Sabudana(sabakki,tapioca pearl,sagu) khichadi/uppma
This as i have labeled is Maharashtrian recipe.they prepare this dish during fasting.Its a very good source of starch.very good for kids,even1 year old kid can kid,its healthy.The important part in preparing this dish is that it should be soaked properly.If soaked too much ,then it will become sabudana paste and if soaked little then it will be hard(feels like not cooked properly).
My Friend sonali gave me some tips towards making the one,which is really helpful.so when last week i prepared this on Shivratri,i thought why not share this recipe with others,its really a different dish as not many people prepare this..Its really very simple,healthy and best for the evening snack too.
Ingredients:
1 cup sabudana(sagu)
1/2 cup peanuts
2 boiled potatoes
1 tsp cumin seeds
2-4 green chilies
1tbsp oil/ghee
curry leaves
1 tsp cashews
1-2 tbsp grated coconut
salt to taste
1/2 tsp sugar
1 tbsp of lemon juice
coriander leaves
Method:
First soak sabudana,for this wash sabudana 2 times and drain all the water .then pour little water enough to just dipped,that is upto the mark sabudana is.soak it overnight.OR the other way of soaking it is wash and soak sabudana for 30 minutes and then drain completely and set aside for 8 hours.
Dry Roast peanuts and then remove skin and ground it into powder.Keep it ready ,diagonally cut green chilies ,finely cut coriander leaves and peeled and thinly made small potato slices .you can boil and add cook potatoes,but i prefer without.
Take a pan add oil or ghee ,then add jeera(you can add mustard too,but as i did it for fasting i add just cumin seeds),cashews,green chilies ,hing,curry leaves and coriander leaves .when jeer is light brown add cut potatoes and stir for 1 minutes.close the lid and let the potatoes cooked in that steam for 3-4 minutes,stirring in between.(you can use onions,peas and add turmeric,but as for fasting i don't put it and i liked khichadi the plain one)
Add or sprinkled little on the soaked sabudana before putting above.When potatoes are cooked add little salt ,sugar and stir for 1 minute.Now add the sabudana ,ground peanut and stir properly for 2 minutes so that it is mixed completely.
stirring in between let the sabudana to cook for 2 more minutes and finally sprinkle lemon juice on it and mix thoroughly.garnish it with dry grated coconut.eat with curd or plain it tastes good.
