Heerekai(Ridge gaurd) Dosa/Chatti

This is also one special kind of dosa,which we prepare in Mangalore.It can be prepared different types, like
Heerekai(ridge guard)/Zucchini Dose/Chatti
Eggplant/Brinjal/Mangalore gulla Badnekai dose/Chatti, 
Soppu(leafy/palak/methi etc or mix leafy vegetables)dose/chatti,  
Nerruli(onion) kemp dose/chatti,  
Balekai(raw plantain) kemp(red) dose/chatti.
For we Mangalorean ,gives us any vegetable and we will make dish/dosa out of it.
For this the batter is the same as my earlier Uppi Hulli Kara Dose .
My husband loves this dish,which my mother -in -law makes it very tasty.
Here in USA we get Heere kai(ridge guard) in Indian stores only,so i sometimes substitute this with zucchini.
Ingredients:
  • Uppu Hulli Kara(spicy-sour)dosa batter(refer spicy-sour dose recipe)
  • Heerekai(ridge guard)/onion/palak and leafy veggies/Balakai(raw plantain)/Eggplant/Zucchini
  • oil/ghee
Method:

Prepare dose batter by soaking rice and grinding it along (refer spicy-sour dose recipe)with cumin seeds,coriander seeds,turmeric powder,tamarind,jaggary,salt,hing powder into smooth paste.the consistency should be little thicker than  Uppu Hulli Kara dose .

Wash the Heerekai(ridge guard)/Zucchini and peel off the  skin.
Cut the heerekai/zucchini making thin round slices.
Put it in the bowl full of water,to remove its stickyness and drain properly.
For onion dose you have to chop the onions into very small pieces.
Like wise for leafy vegetables,chop them.
But for Raw Plantain the procedure is same as Heerekai and for Eggplant cut into half ,then make thin slices.


Put this Heerekai/Zucchini/Eggplant/Rawplantain into the batter .Heat the griddle,sprinkle little oil on it.you can spread it with eggplant chottu(upper cap position cut with little flesh of eggplant)/onion big piece.they act as nonstick spray.the batter consistency should be like besan bhajiya/pakoda. Dipping the vegetable thoroughly place them one by one on the griddle like as we do for pakodas.place the vegetables attach to one another,very near by near ,give shape like dosa.Means arrange them in big circle.Shallow fry/put oil  on the dosa and close the lid.cook both sides on medium heat.It should be Crispy on both sides,it will take 5-6 minutes to cook on both sides.
The same way chop onion/palak and put them into the batter.with the help of ladle pour the mixer in the centre of the hot griddle and spread using back side of ladle or with your hands.put oil on the dosa and cook on both sides.
Serve hot with butter.you can eat this with hot plain rice/just like that during breakfast time and also serves as a very good tea time snack.
