Ajethna/Thal[Mangalore Cuisine]---------- Mixed Vegetable Dry curry
This is very easy and healthy mixed veg curry.But really tastes good and goes well with rice and chapatti too. Ingredients: 1 cup French beans cut into small pieces 1 cup carrot cut into small pieces 1 cup potato cut into small pieces salt jaggary 1-2 green chilies cut lengthwise Masala 2-4 red chilies 1/4 tsp mustard seeds 1/4 cup fresh grated coconut seasoning 2 tsp oil 1/2 tsp mustard seeds 1/2 tsp urad dal 1/4 tsp hing(asafoetida) curry leaves 1 red chili broken into pieces Method: Wash,clean and cut all vegetable.peel and cut potato and carrot into small pieces .Cut french beans into small pieces . After the vegetables are cut cook them together adding little salt,green chilies,little turmeric powder and jaggary in pressure cooker/microwave. Dry grind red chilies,mustard seeds and coconut together.what i do is first grind red chilies and mustard together in coffee grinder and then grind it with coconut in blender(as i have this juicer blender).the m
