Stir Fry[North Indian cuisine}------Alu Gobi ki sabzi(Cauliflower Curry)
Here in USA we get very good quality of Gobi(Cauliflower),very big one too and cleaning it is not at all a hassle.but the cauliflower is so big ,once you bought you can prepare two dishes from it. Alu Gobi sabzi is a famous and i think all north Indians prepare it once a week.I try to make one like authentic and i keep experimenting with it.every curry if you noticed need Alu,which gives curry good taste.but eating alu daily is not that good ,so i keep experimenting with other combinations.you can try with same combination .
Ingredients;
Method
Take a pan ,put oil and all the seasonings.when mustard start splutter ,add Alu and stir for 1 minute.close the lid and let potato cook .Now add onion,ginger and garlic and fry till onion turns red.
Now add cauliflower ,other veggie if you are using those,turmeric powder,red chili powder,jeera and coriander powder,green chili,cashew powder and stir it properly till all masala is mixed .
Now add salt,sugar and tomato, cover the lid and let cauliflower to cook completely.when all veggies are cooked add chat masala and stir it nicely and fry for 3 more minute.let it cook and no need to close the lid.switch of the gas and sprinkle coriander leaves on the curry.if you need you can sprinkle 1tsp of lemon juice too.This goes very well phulka's/chapatti's/rotti's

- 1 big onion finely chopped
- 2-4 garlic cloves finely chopped(optional)
- salt to taste

- 1 tsp chili powder
- 1/4 tsp jeera powder
- 1/2 tsp coriaander powder
- 1 tsp chat masala
- 1 tsp cashew powder(optional)
- coriander leaves
- 1-2 green chili(optional)
- seasoning:
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp jeera(cumin seeds)
- 1/2 tsp Saufn(fennel seeds)
