Veggie Puffs

One of my all time Bakery product was  Bangalore's Iyengar bakery Veggie Puffs.In India preparing Puffs at home is little difficult.My grandma used to prepare very tasty puffs.She used to make mixed veggie sabzi(dry curry) and outer covering is just like samosa dough.But that time oven was not there so she used to fry like samosa.Here in USA making Puffs are like very easy.buy puff-pastry sheets and prepare curry and fill it and bake it.good for the parties.
Ingredients:
  • 1 packet puff-pastry sheet
  • 2 big alu(potato's)
  • 1 medium onion
  • mixed veggies(like carrot,beans,corn,peas,beat root---finely cut)
  • coriander leaves
  • 1" ginger
  • 1-3 garlic cloves(optional)
  • salt
  • 1/2 tsp coriander powder
  • 1 tsp garam masala
  • 1/4 tsp turmeric powder
  • 1 -2 tsp chili powder
  • 1/2 tsp chat masala
  • 1 tbsp oil
  • 1/2 tsp mustard
  • 1 tsp jeera(cumin seeds)
Method:

Thaw the puff-pastry sheets at least for 30 minutes or 1 hour before keep it in the refrigerator.

By that time prepare filling.
In a pan put oil,when oil is hot add seasoning-mustard and jeera seeds,when it sputters add ginger,garlic and onion and fry till it turn brown.
Now add turmeric powder ,red chili powder and salt and fry for 1 minutes.
Add all the cooked veggies and garam masala.fry for 2-3 minutes.
Finally add chat masala and stir it properly.leave it for 2 minutes.the filling is ready.

Method to prepare puffs:

In  puffs sheet there are 2 big sheets.one sheet contains 3 small sheets.
take one sheets at a time.I make 5 rectangular pieces out of this.
Keep atta flour with you and roll a little each small pieces.
Put the fillings in between and fold from both sides seal the sides.
Like this do all the pieces.
In all we can approximately make 30 puffs.

you can freeze this now keeping it in zip locks and when you want it just remove and bake it in the oven.
No need to thaw now.
For baking you have to preheat the oven to 400 degree F(instructions are given on the packet) and then keep the tray into the oven.the tray should be greased before placing the puffs.Bake it for 20 minutes.
keep checking ,other wise puffs will burn.switch off the oven.
serve it with ketchup,hot and sweet sauce or tamarind or mint chutney.

  1. As you said its easy to prepare Puffs here as we get real good puff pastry sheets and also we can stuff it with our favorite masala. I really love the flavor of your masala and had been thinking of asking the recipe, now I got it.
