Samosa


Samosa,name its self brings water to your mouth right.Ya i think this stuffed very deep fried snack is a popular snack in India,specially in Northern India and also many other countries too.This triangular snack is often served with green chutney as an appetizer and widely available in all Indian restaurants.My mom used to prepare this snack at home when we were kids,but the exact restaurant style i learned it from my friend pooja.

Ingredients:
For Outer Covering:
 2 cups All Purpose flour(Maida)
 2 tbsp oil
 salt
 water to knead
For Inner Stuffing:
 4-5 Alu(potato)
 1 cup Peas
 1tbsp oil
 1 tsp cumin seeds
 1/4 mustard seeds
 1-2 tsp cashews
 1 tsp raisins(optional)
 1 tsp red chili powder
 1/2 tsp turmeric powder
 1tsp coriander powder
 1/2 tsp crushed coriander seeds and fennel seeds(optional)
 1-2 tsp amchur powder
 1 tsp garam masala

Method:
First prepare outer covering.
Take a bowl mix flour,oil and salt and mix them properly.
Knead them together pouring required amount of water to form smooth dough.
cover it with wet cloth for at least 1/2 hour.

Meanwhile prepare Inner stuffing.

For this take a pan put oil ,cumin and mustard seeds,when they splutter add cashews and raisins.
Now add frozen peas/boiled peas and stir them for 1 minute.
Then add all dry masalas like red chili powder,turmeric powder,coriander powder,amchur powder,crushed coriander and fennel seeds,salt,little sugar and stir them for 1 more minute.


Finally add washed,boiled and mashed potatoes and stir them properly.
Then add garam masala powder and mix everything for a while.

Once this inner stuffing is little cooled off start preparing samosas.


Knead the dough once again and make small balls of it.
Take a small size ball of dough roll into round shape of 5 inch diameter.
Cut this circle equally into two half's.
keep it with you water- (1 tsp) flour paste to stick the corners of samosas.

Take one half ,making its cone in your hand by sticking the two sides with the paste  and then  put 2-3 tsp of potato stuffing into the dough cone.


Finally seal the remaining open side of cone with the paste .i do a little twisting decorating sealing.
Before hand prepare at least few samosa.

Now heat the oil for frying and one the oil is hot put 2-3 samosas into the oil.
Fry this samosas in low-medium flame so that it is cooked properly into crispy ,tasty and delicious samosas.
When the samosas turn golden brown drain and remove from oil .put them on kitchen paper towel.

Serve this Delicious samosas hot with spicy green chutney or chutpaty(hot-sour) tamarind chutney.
