Majjige Huli (buttermilk sambhar)

This is specially a South Indian recipe which have many versions.I am here sharing Mangalore style Majjige huli.Name itself tells you that in this we make use butter milk.It is some what similar to Avial but here we don't make use of  cumin seeds in masala like avial.
This recipe can be prepared with many lot of vegetables like simmebadnekai(chayote squash),bendekai(okra/ladies finger),Ash guard,halasande(long beans),cucumber(both sambhar and normal one) etc....
Here i am using Simmebadnekai(chayote squash).Goes very well with plain rice ,tastes good and good for your health too.

Servings: 3-4 persons

Ingredients:

  • 1-2 chayote squash( 1big bowl full chayote squash cut into medium pieces)
  • 1/2 cup fresh grated coconut
  • 3-4 green chilies
  • salt
  • 1 cup sour butter milk
  • seasoning:
  • 2 tsp ghee
  • 1/2 tsp mustard seeds
  • 1/4 tsp methi seeds
  • 1-2 red chilies/(curd chilies) broken into pieces
  • pinch of hing(asafoetida) 
  • curry leaves
Method:


Clean,wash and peel the chiyote squash.Make medium size cut of the vegetable.
Pressure cook or cook it in microwave adding little salt.
Even you can cook this directly in vessel in medium flame adding little water,one split green chili and salt.
Meanwhile ground together coconut and 2 green chilies adding 1/2 cup buttermilk into smooth paste.
once the vegetable is cooked add this coconut paste,remaining buttermilk,salt and mix them properly.
Let it simmer for 5 minutes on slow flame stirring occasionally.
Finally do seasoning on separate pan and put them on above huli.
Serve hot with plain rice and sandige(hapla).
