Nan/Kulcha


Nan or Kulch is nothing but a Indian Flat Bread made from maida.It is basically from North that too Punjab part of India.It is usually baked in earthen clay oven until golden brown.There is not much difference between Kulch and Nan.When the dough is stuffed with some paneer or onion or potato filling and rolled then it becomes Kulcha and when baked plain it's a Nan.Nan can be made plain Nan or rotti and when butter is spread then it is butter Nan.For this recipe also i didn't make use of yeast.
Actually My friend shweta once suggested me to post Nan/Kulcha recipe.From that day onwards i was searching for this recipe that too without yeast.Then once she tried making Nan and told me her experience.
so then i finally decided to give it a try.The outcome was really very good,now i have confidence that at home also we can prepare Nan and Kulcha.

Ingredients:
3 cups Maida(all purpose flour)
1/2 tsp baking powder
pinch of baking soda
1tsp sugar
1 tsp salt
1/2 cup oil
1/2 cup dahi(curd/yogurt)
water/milk
butter
1tsp sesame seeds

Method:

Sift together Maida,salt,sugar,baking powder and baking soda.

Now add 1/2 quantity of oil and mix them properly.Finally add curd and mix thoroughly with your hand and if needed add water/milk to make soft non sticky dough.

Knead them for 5-7 minutes.Put remaining oil and knead for 1 minute.cover with wet kitchen paper towel and let it undisturbed for 5-6 hours so that dough gets fermented.

After the rest time knead them again for 3-4 minutes.Now make equal size balls of the dough.

Dust the surface with flour and put this dough ball on it.
Roll this using roller or with hands using flour in between.
You can roll this into round or oval or triangle shape.
also you can sprinkle sesame seeds on it and roll once.

Preheat oven for 450 degree Fahrenheit.
Spread butter on the Nan and place it on the greased pan and bake it in the oven for 3-4 minutes.
Fry till golden brown spots is seen on both sides of Nan.

The other way of doing it is on the griddle.Heat the Griddle,put the nan on the hot griddle, spread butter on one side.let this Nan be cooked on medium flame.similarly you can cook other side or you can put other side directly of flame using phulka/papad tava and then spread butter on it.

For making Kulchas make filling of paneer.or potato or just onion and like parathas after rolling into small round put this filling.Bring the edges together and seal.Again using flour roll this into desired shape and length.
Bake or cook on griddle similarly like Nan.

Serve this Nan or Kulcha with spicy gravy like Paneer Butter Masala,Vegetable Koftas or Chana masala etc..
