prasadam-----------Doodha Peda




Doodha Peda is a very famous sweet.whenever there is good thing happened generally people celebrate it with distributing this sweet.As from the name only tells you its made of milk and milk products.

As my countdown to 100th recipe is started so i thought why not start with this sweet which i have prepared when i have kept satsang in my house last month.and also as my family loves sweets a lot ,so from this 95th recipe to 105th recipe i am going to post only sweets.so its a sweet mela for you all.

There are many methods for preparing this sweet.here i am going to post two methods,so according to the availablity of ingredients you can prepare the dish.During satsang i have prepared 1st method ,which is ok but the second method which i have tried during Diwali time was perfect.

1st Method:
peda is made of milk and sugar with a flour of cardamon,mainly make for prasadam and during functions and festivals.

Ingredients:
1 cup paneer
1 cup milk powder
1 cup milk
1/2 cup sugar
1 tsp cardamon powder
kesar(optional)
2 -3 tbsp  butter
1/4 cup dry fruits preferred pista
 Method:
Prepare paneer with approximately 4 cups of whole milk(check the recipe for paneer in paneer butter masala recipe).
knead the paneer with hand thoroughly so that all milk granules should be gone and you should get a smooth texture.
Take a heavy bottom pan ,nonstick is preferable.Add butter and when it is melted add paneer and stir it for 1 minute.
Now add milk,kesar and milk powder and stir continuously so that lumps won't form and make the mixture smooth.
Stir the mixture continuously in medium flame approximately for 10-15 minutes or till it start leaving the sides of the pan and become like a dough.
Switch off and remove this into a bowl .let it coll down.
When it is little warm add powder sugar(make fine powder of sugar in coffee grinder or mixy) and cardamon .mix everything together and knead them properly.
Divide this dough into approximately 20 pedas that is small size balls and press them a little with your pam.
Place one sliced Almond or Pistachio or Raisins at center of the peda and press them lightly.

2ND METHOD:
This method to prepare the doodha peda i learned it from my friend Sandhya .She prepares very soft and tasty pedas.Last Diwali we both decided we will prepare snacks and sweets like in India(like when we were kids our mom used to prepare those sweets and snacks,and we kids used to distribute to all our,neighbour, friends and families)  and will distribute among friends.We had such great time preparing all the sweets and snacks together.
Ingredients:
1 16 oz box full Ricotta Cheese
1 cup milk powder
1cup sugar
1 tsp cardamon powder
kesar(optional)
2 -3 tbsp Ghee/ 1/2 stick butter
1/4 cup dry fruits preferred pistachios
 Method:
Take a heavy bottom pan ,nonstick is preferable.Add butter and when it is melted add full box of  ricotta cheese and stir it for 5-10 minutes till it is little dry.
Now add sugar and when it start melting add kesar and milk powder and stir continuously so that lumps won't form and make the mixture smooth.
Stir the mixture continuously in medium flame approximately for 15-20 minutes or till it start leaving the sides of the pan and become like a dough. add cardamon powder and mix it properly.
Switch off and remove this into a bowl .let it coll down.
When it is little warm mix them together again and knead them properly.
Divide this dough into approximately 20 pedas that is small size balls and press them a little with your hand.
Place one sliced Almond or Pistachio or Raisins at center of the peda and press them lightly.
For a week it won't spoil and if you want to keep it for long refrigerate it and enjoy this lovely and mouthwatering sweet for days together.
