Payasa/Rasayna--------------Broken Wheat Payasa(Godhi kadi/dalia payasa/Kheer)

This is a very healthy type payasa.tastes very good and also very easy to make.Mainly prepared during special occasions and as a prasadam.We get broken wheat in Indian stores and in Hindi it is called Dalia.
It is nutritious ,healthy and people also eat when they are fasting.Its very healthy for kids and for people with diabetic its a good meal too.This also i have prepared as prasadam when i have kept satsang in my house.
somehow i like payasam very much in all the sweets and same way my son also love payasam a lot.i make this payasam in two ways.if i making it milk payasa then i will use condensed milk,sugar and milk and here i have made with coconut milk and jaggary .the authentic Mangalore way of doing payasa is to make with coconut milk and jaggary.
Ingredients:
1 cup broken wheat
1 can of coconut milk/ prepare coconut milk approximately 3-4 cups
1.5 cup jaggary
1/4 cup mixed dry fruits like cashews,almonds,pistachio and raisins
2tsp of ghee
1tsp cardamon powder

Method:
Wash the broken wheat for 2-3 times and add 1 cup of water and soak overnight or at least 2 hours.
Cook them in pressure cooker with 3-4 whistle and  then 10 minutes at low flame.
Grate the jaggary and keep it ready.
Extract the coconut milk(procedure given in mango rasayna recipe) from fresh grated coconut or use ready made coconut can store brought.
Take a heavy bottom pan add ghee ,raisins and cashews.fry them till cashews turns red and raisins fluffs out.
remove and keep it aside.
In the same pan add jaggary and little water to melt the jaggary and stir continuously.when jaggary starts melting add cooked broken wheat and stirring in between let them simmer for 5 minutes or till it start boiling.
now add coconut milk and similarly stirring continuously let it simmer for 5 more minutes.
Add cardamon powder,fried raisins and cashews,sliced almonds and pista.i also add 1-2 tsp of almond and pista powder just for flavour and thickening.Let it simmer for 1 minute or 1 boil then switch it off.

Serve hot or can also be served cold.but i like all payasam hot.
