Burfis----------Almond Burfi -Festival Dishes and Diwali Special

Almond burfi is all time favourites of all and prepared during festive seasons. Its easy, simple and healthy sweet. Before this i have tried this sweet many times but success rate was 50% .My husband's aunt she makes very good almond burfi,so last month when i wanted to give sweets to my pregnant friend i thought this is a perfect sweet for her,but to try it i was little scared. Then i called my aunt and then she told me some easy way and useful tips.after that i prepared almost two three times this sweet and every time it came out amazing and also from this method you can prepare very quickly.

Ingredients:
1 cup Almond
3/4-1 cup sugar
1/2 tsp cardamon powder
1/2 stick butter
Method:
Soak Almond in water for 1/2 hour and then microwave them for 1 minute.when they become warm squeeze their skin out.drain the water and put this almonds on kitchen paper towel and try to make it completely dry.
Now grind this almonds, better dry ground it.as i don't have Indian mixy i grounded in coffee grinder.
there is no need of grinding it into smooth paste, because it taste good to chew few pieces of almonds here and there.

Now take a heavy bottom pan add sugar and milk and bring it to one boil stirring continuously.

Now when sugar is completely dissolved add almonds and stir them to mix it properly.once almonds are mixed properly add 3rd part of the 1/2 stick(i put butter three times little by little).

Keep stirring them for approximately 10 minutes or till the  almond mixer start leaving the sides of the pan.
When it become like a ball at the centre, switch of the flame and spread it on the greased flat plate or tray.
After it is little cooled off cut into your desired shape.

You can also apply Silver/golden foil on the top of the burfi to give professional look.
Thanks chikki for sharing your recipe with me.
