Stir Fry[North Indian cuisine]-----------Gobi Mussalam

This is very simple yet the flavour of masala's makes the recipe amazing.almost like 4-5 years ago when i was searching for some different recipe for gobi i found this in some blog.Its actually very rich type of dish but somehow i felt like making it simple type and made few changes and tried.from that day i often prepare this dish.
It goes well with all types of Indian Bread.You can prepare this gravy version by adding cashew paste and cream,but i liked somewhat dry one.
Its basically a mughlai dish and sounds non vegetarian,but its purely vegetarian dish.Its nothing but a whole cauliflower  cooked in spicy gravy.
Ingredients:
  • 2 cups gobi (cauliflower florets) big pieces
  • 2 tomatoes
  • 1 big onion
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1/4 tsp cumin powder
  • salt
  • sugar
  • 1tsp butter(optional) 
  • 11/2 tsp gram masala
  • 1 tsp ginger chopped
  • 1 tsp garlic paste
  • seasoning:
  • 3-4 tsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1-2 tej patta(bay leaf)broken into pieces
  • 1 red chilies broken into pieces
  • 1 tsp cashew pieces
  • 1 green cardamon
  • garnishing:
  • coriander leaves
  • lemon juice
Method:
Clean,cut and wash the cauliflower florets thoroughly.If the cauliflower is not that clean then clean it properly and then put this florets in hot boiling water containing salt for 5 minutes.
drain this completely before adding in gravy.the gobi should not be completely cooked.if cauliflower is clean as we get in US then there is no need for putting it in hot water.
Wash tomatoes and cut lengthwise .similarly cut onion into long length.
Take a pan add oil and all seasoning,when mustard starts spluttering add all masalas like turmeric powder,red chili powder,coriander powder,cumin powder and garam masala powder and stir this for few seconds.now add ginger and garlic and stir fry for 1/2 a minute.
Now add onion,and stir fry for 2 minutes or till onion turns red.add tomatoes,salt and sugar later and stir fry till tomatoes are all cooked.
When tomatoes are all cooked finally add cauliflower florets and mix this gravy properly with cauliflower.
Cover the lid and let this cauliflower be cooked in that steam,masala and the gravy,without adding any water.
This makes it very flavourful.
remove lid and stir in between.when gobi is cooked completely garnish with coriander leaves,butter and lemon juice.
This flavour full Sabzi goes well with all types of Indian Bread.
