Stir Fry[North Indian cuisine]-------- Chatpati Bhindi(Okra/Bendekai/Ladies Finger)

Bhindi is the most favourite vegetable in my house.My daughter can eat happily chapati and rice if i make bhindi daily.And also a very nutritious vegetable.here good bhindi's get in Indian stores only,but what to do i manage with this cut frozen okra's.You have to follow some tips while using cut okra's then almost near to the original ladies finger curry taste will come.This recipe is very easy and chapati type.
Ingredients:
  • 1/2 kg Ladies finger(bhindi)(half packet cut okra)
  • 3-4 green chilies
  • 1" ginger 
  • 1 medium size onion
  • 1 tsp Fennel seeds(saunf)
  • 1/4 tsp fenugreek seeds
  • 2tsp oil
  • 1tsp cumin seeds
  • 1tbsp coriander seeds
  • 1tsp dry mango powder(amchur)
  • 2tsp red chili powder
  • salt to taste
  • 1/2-1tsp sugar
  • 1tsp lemon juice(optional)
Method:
Wash ,wipe and cut head and tail of lady fingers. Cut each into three to four pieces depending on  the size.
Remove stems,wash and finely chop green chilies.wash,peel and finely chop ginger.peel,wash and slice onion thinly/you can chop too.Crush fennel seeds and fenugreek seeds lightly.

Take a pan add oil,crushed fennel seeds,fenugreek seeds,cumin seeds,when cumin seeds are roasted add onion,green chilies,ginger,coriander powder and stir them properly.when onion turns light brown add cut bhindi ,red chili powder,dry mango powder,salt and sugar.cook uncovered for 3-4 stirring in between.add lemon juice and stir for 1 minute .let it simmer for 2 more minutes till ladies finger is cooked completely and oil start leaving the sides.when you using cut okra's to get rid of the stickiness you can add lemon juice while adding okra  and need little more oil  to get authentic bhindi curry.
serve hot with hot chapatti's
