Banana Nut cake/Bread

This is one of the recipe which is rich but yet feels and it is somewhat healthy.Goes well with hot coffee.
My son is a banana lover and once  the banana is really getting very ripen,i was searching for the banana cake recipe and after a following 2-3 recipe i made it according to my taste and tried this one.it really came out well.This recipe is the best use of very ripened banana,which otherwise goes directly to trash.Here i have used whole wheat flour to make it a healthy kids snack.so who love baking ,try this delicious cake/bread recipe and let me know your suggestions.
Ingredients:
  • 1/4 cup unsalted butter/oil
  • 4 tbsp of sour cream
  • 1/2 cup sugar
  • 1/2 cup honey(optional)
  • 11/2 cup very ripened banana mashed
  • 3 eggs
  • 1/2 tsp vanilla extract
  • 11/2 cup all purpose flour/wheat flour
  • 1/4 tsp salt
  • 11/3 cup milk
  • 1/2tsp baking powder
  • 1/2 cup mixed nuts(dry fruits)
Method:

Take a mixing bowl,add riped banana and sour cream and blend together with hand electric beater so that no lumps should be there and nice smooth fluffy paste is formed.
Now add butter/oil,sugar,honey,eggs,vanilla extract and mix them properly using electric beater.
sift together flour,salt and baking powder and add this above .again blend everything together for 2 minutes.
Finally add milk so that you can judge the consistency of cake and adjust as needed.
lastly mix 3/4 of the nuts and mix it with spatula.
Preheat oven at 350 degree F.
Once the mixer is well blended pour this mixer into greased 9x13 cake pan/ bread loaf tray.
Bake for 25 minutes or cake is cooked properly.
Cake will spring back if touched at the centre.don't overcook cake and once cooked remove and keep it outside for cooling.
If possible place a wax paper over cake to absorb moisture while cooling.
Decorate the cake with nuts and powder sugar if needed.
A hot piece of this cake with hot coffee really goes well together.enjoy.
