Mangalore Cuisine-------Sambhanda(Chutney/Gojju)

This is a sort of chutney,which can be eaten/served with Plain Rice.Its a special Mangalore style recipe and very easy to make.It can be served with Dose,Idli and Appa too.You can prepare this many different vegetables.
Here i am using the inside part of zucchini,which contains small seeds sort .You can prepare this with cabbage,the hard part of the cabbage,the inner part of padvalkai,bottle guard, skin of herekai(ridge guard)etc.In Mangalore there were recipe if a take some vegetable then with its every part like seeds,skin and the main veggie there will be some recipe.If you don't want to do with the skin or the inner portion of the vegetable ,you can prepare the same with main part of the vegetable.
For example if you cut cabbage ,there will be hard parts in between with which you can prepare this chutney(why waste) and which really good.some time this part of the vegetable will be very Nutritious but most of the time we trow it away.
Ingredients:
1 zucchini
1" tamarind /1/2 tsp tamarind paste
1/4 tsp turmeric powder
salt
1" jaggery(optional)
4-6 red chilies
2 tsp urad dal
1/2 cup fresh grated coconut
1 green chili(optional)
1-3 pieces hing/1/4 tsp hing powder(asafoetida)
seasoning
1 tsp oil
1/2 tsp mustard seeds
1/4 tsp urad dal
1 red chili broken into pieces
pinch of hing
curry leaves

Method:

Wash Peel and cut zucchini into half. cut into pieces and use the same for chutney or remove the inner part and keep aside.with the main part you can prepare sambhar or palya.the same this chutney can be prepared with the skin of zucchini too.

cut this part ,put into a bowl.add salt,tamarind,jaggary and turmeric powder and sprinkle water on it.coo this in pressure cooker or microwave.

Take a pan add urad dal ,red chili,hing and 1/8 tsp of oil.fry this till dal turns brown in color.switch off the heat and add coconut in it and stir for 1 minutes.
Grind this with the cooked vegetable in blender into smooth paste .don't add too much water.
Finally give tadka(seasoning).

Serve wit hot plain Rice.Its a good combination with Saru(rasam).

  1. I think I have tasted it . It was yummy . Noone can figure out its with vegetables. Such a variety recipe ,that too utilizing vegetables completely without any wastage.
