Maharashtrian Cuisine------------Pav Bhaji(Street Food/Chat type)

When we were in college ,those days we used to eat Pav Bhaji and Pulao at Tella Wala Bhayyaji(street stall man) who used to sit near our college.Anything special happened to any body even it is small everybody used to wait to have a party and we used to go to this tella.He used to make amazing pav bhaji really.the taste now also i crave for the one.So when ever i make i try to make it like the one .Pav bhaji is really a very healthy dish which requires lot of fresh veggies.Kids who won't eat much veggies also love this dish.As the recipe its self tells you that it requires Pav=bun and Bhaji = spicy mixed vegetable curry .This is a famous Bombay street food.It should be served hot with dollop of butter on it,taste amazing.

This is a very simple ,tasty and healthy food,serves best for  the parties. Some  people  prepare bhaji using all types of vegetables,and some use only potatoes and peas.I as you know prefer lots of veggies.I tried all different brand Pav Bhaji masala,but liked Everest Pav Bhaji masala the most.

Ingredients:

  • 1 packet pav which contains eight pav
  • 3-4 potatoes
  • 1/8 kg of french beans
  • 1/8 kg of Carrots
  • 1/8 kg of capsicum
  • 1/2 of cauliflower
  • 1/8 of cabbage(optional)
  • 1 cup peas
  • 1 big onion
  • coriander leaves
  • 2-4 green chilies
  • 2"ginger
  • 4-8 garlic cloves
  • 2 cups tomato puree
  • 1 tbsp Everest pav bhaji masala
  • 1/2 tsp turmeric powder
  • 1/2-1 tsp red chili powder
  • 1 tsp coriander powder(optional)
  • salt
  • sugar
  • 2 tsp jeera(cumin seeds)
  • 1 tsp mustard seeds
  • 1 tbsp oil
  • garnishing
  • coriander leaves finely chopped
  • red/white onion finely chopped
  • lemon  juice/lemon cut into small pieces
  •  Amul butter/I can't believe its butter
Method:

  1. First wash all the vegetables neatly and finely chop them ,except potatoes.
  2. Boil all these cut vegetables together in pressure cooker sprinkling little salt on it.Along with this cook washed potatoes whole or cut into half separately.
  3. When all the vegetables are cooked ,mash them thoroughly using hand masher.peel the cooked potatoes and mash them too.
  4. Grind together ginger,garlic,coriander leaves,jeera(cumin seeds),very little mustard and green chilies into paste.
  5. Finely chop onion,blanch tomato and make puree of it.you can use tomato puree Tin Can also.

  1. Take a heavy bottom pan,add oil ground masala and stir fry till raw smell goes.now add onion and fry till it turns brown/red in color.
  2. Now add turmeric powder,red chili powder,coriander powder,tomato puree and stir fry for 2 minutes.
  3. Add all the boiled and mashed veggies,salt,sugar ,pav bhaji masala,2tsp of butter and stir it continuously for 2 minutes so that all the masalas are mixed with the veggies.
  4. simmer the bhaji for 15-20 minutes mashing and stirring in between so that bottom won't burn.close the lid as the mixer can spurt when it boils.check the salt,sourness and spice and add accordingly.simmering makes the flavor  to meld together.In restaurants also the Bhaji will be sizzling on the big hot Iron griddle and the person will be mashing the bhaji now and then.
  5. For garnishing finely cut onions,coriander leaves and cut lemon into small pieces,here you can use lemon juice too.
  6. Take a thava(griddle)  and fry buns with butter.The real pav bhaji pav(bun)is little different from the one we get here.For little pav bhaji flavor you add big dollop of butter on the hot griddle,sprinkle little pav bhaji masala and fry the bu in this spicy butter until it is golden.
  7. Serve hot with sizzling hot Bhaji garnished with onion,coriander leaves and lemon juice.
