Maharashtrian Cuisine----------Kand(Sweet Potato,Genasu) Paratha/Puri/Poli

Kand(sweet potato) puri we used to love when we were kids.This time when i got sweet potatoes from the stores i thought why not try making one.so i was thinking to make a little change in he recipe and made kandh paratha/poli .like puran poli i made puran made of kanda and made the kanda poli(poli means roti in Marathi).it tasted very good and as it is a sweet in taste kids loved it .here is the recipe.

Ingredients:
1 kand(sweet potato)
1/2-1 cup sugar(depending upon the sweetness of sweet potato)
1 tsp cardamon powder
1 small piece jaikai(nutmeg) [make fine powder of it](optional)
1-2 tsp ghee

2 cups Atta(wheat flour)
little oil
water to kneed
2 tbsp ghee
Method:
Boil sweet potatoes in pressure cooker or microwave.
Take the cooked sweet potatoes and mash it using hand masher or blender.
Dry powder sugar,nutmeg and cardamon.
take a pan add 2 tsp ghee, sweet potato and sugar mix and stir continuously till all the water from the sugar is evaporated and ghee start separating from the puran/filling.switch off the heat and take it into a bowl.let it be cooled off to room temperature.
This is a filling for the paratha/poli.
Now take Atta ,pinch of salt and about 1 tsp of oil.mix properly and knead this flour putting little by little water into smooth dough.Finally add 1 more tsp of oil and knead the dough for 2 minutes.keep it aside covering with wet paper towel for 15 minutes  .If the dough is kept for more than an hour knead it again for 2 minutes and then make paratha.
Divide filling into small balls(just the size of golf  balls) before hand.Same way make small balls of dough and keep it ready.Keep the griddle on heat.Take the dough ball roll it using wooden roller(bellan) into small round chapati using in between  wheat flour for rolling.Now put the filling ball on this small chapati and close from all side and seal it like a ball again.
Now again roll this ball into a medium size chapati.take care the filling should not come outside,for this the filling should be very dry.
when the griddle is hot put this sweet chapati on the griddle and cook on both side spreading ghee on it.when both the sides light brown bubble is seen remove it from the griddle.

Serve hot with ghee on it.

Method to make sweet potato puri:
Take a mixing bowl and add wheat flour,boiled and mashed sweet potatoes,sugar powder,cardamon powder,pinch of salt and 1 tsp oil.mix everything properly and putting little by little water(don't add too much as sweet potato will contain some water in it) knead into puri dough.Finally add 1 tsp more of oil and knead thoroughly.keep it aside for 15 minutes.
Divide into golf size small balls of dough and roll it into 6"round shape rounds using little flour for rolling.
Heat sufficient oil in a pan  and when oil becomes hot,fry puri one puri at a time.
To make the puri puffed up after 2 seconds of putting start pressing lightly(holding them under the oil on the first side until they puff) on puri and leave ,it will start puffing.
Once it is puffed ,turn over to cook on other side.when puri become light brown drain and remove it on the kitchen paper towel.This puri won't puff that much like normal puri.
You can serve hot with any achar/pickle/sauce/plain like that.kids love this dish.

  1. Actually, the Marathi word for sweet potato is ratala. Khand or shakarkhand is Hindi.
