North Indian cuisine--------Dahi Vada/Thayir Vadai/Masru vade/Dahi Bhalla

This is a very special snack prepared in all regions of India,but they call it by different names.Method of garnishing  also differs a little bit,but all method it tastes really good.This is  my Husbands favourite dish.And some how though it is a fried snack,you won't feel one.as it contains curd and half of the oil is removed in the process.So here is my version of Dahi vada.

Ingredients:
  • for vada:
  • 2 cups Urad dal
  • 3-4 green chilies
  • 2"ginger
  • curry leaves
  • coriander leaves
  • 1 tsp pepper powder
  • salt
  • cashews and raisins(optional)
  • For dahi:
  • 4 Cups of curd/yogurt
  • 1/2 tsp hing powder(asafoetida)
  • 1 tsp ginger-green chili paste
  • salt
  • 2 tsp chat masala
  • 1-2 tsp sugar
  • For garnishing:
  • 2 tsp red chili powder
  • 2 tsp jeera powder(cumin powder)
  • 1/4 cup Imli(Tamarind)chutney
  • 1/4 cup mint-coriander chutney(optional)
  • coriander leaves
  • shev(optional)
Method:
For Vada:
Soak Urad dal in water for 2 hours and grind it in blender with all the other ingredients required for vada except cashew and raisins into smooth thick batter.cashews and raisins are mixed with the prepared  batter.
Heat sufficient amount of oil in a pan for frying this vadas.No need of making Meduvada shape for this.
Scoop a little batter from your hand and start putting it into the oil in small batch.fry till golden brown in medium heat,so that vada should be cooked inside.

Drain and remove it on the kitchen paper towel.Like that finish frying all ,and when first batch becomes warm take bowl full of water and put this vada in it.put 3-5 at a time and leave it for 15 minutes.
now squeeze water from the vada pressing it between Pam's and store it in air tight box and place it in fridge.
Method for preparing Dahi:
Take curd in a bowl,put all the above dahi ingredients and beat it with a hand whisk .If required add little drinking water in it.keep this in the fridge.
Just 2 hours before serving put Vadas in the dahi and keep it chill.

Method for garnishing:
Take a serving dish,place vada on it .then pour 1/2 tbsp of dahi on each vadas.sprinkle 1/4 tsp of red chili powder and cumin powder each on each vadas.put 1 tsp of mint-coriander chutney on it and then put 1 tsp Imli chutney on it.Finally garnish it with coriander leaves and shev.For mint and Imli chutneys refer chutney section.
Here remaining dahi is served separately,if some people need more dahi they can add more.Also all the chutneys and red chili powder and cumin powder is served if some people like more spice.Enjoy!

Method for preparing Dahi Balle ki Chat:

This dish i learned from my friend pooja,who used to prepare very tasty dahi balle chat.
In this the garnishing is little different.for this the method of preparing dahi vada is same,then while garnishing we just need little more ingredients like cooked chana(Kabuli chana),Boiled potatoes,Papadi(pani puri papadi).Garnishing is the same but here just add all the curd and also add chana,potato pieces and papadi pieces.This is one of the chats you get in Delhi.
