Ajethna/Thal[Mangalore Cuisine]-----Chinikayi (sweet pumpkin) (shee Gumlakayi) (Kaddu) Palya(Thall)

Many don't like Sweet Pumpkin that too here in USA the taste of Pumpkin we get is different from the one we get in India.But still i make some recipes with this.For a change it really taste good.This is a Mangalore style palya(sabzi) and very easy to make.
Ingredients:
  • 2cups of  Sweet Pumpkin(Chinekayi) also called squash here cut into small pieces
  • salt to taste
  • 1"jaggary(optional)
  • 1/2 tsp turmeric powder
  • for masala
  • 1/4 tsp mustard seeds
  • 4-6 red chilies
  • 1/2-1/4 cup fresh grated coconut
  • seasoning
  • oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • pinch of hing
  • 1 red chili pieces
  • curry leaves
Method:
Take a pan put oil and all the seasoning.when the mustard start sputtering add Sweet Pumpkin ,turmeric powder and jaggary.stir for 2 minutes and close the lid.let the pumpkin be cooked in that steam for 3-5 mints stirring in between.

Meanwhile the pumpkin is cooking prepare masala.dry grind all the three ingredients together.here i first grind mustard and red chili in coffee grinder and then grind this in blender with coconut adding very little water(if Indian blender is there no need to add water,masala should be dry).

Add this masala above when the pumpkins are almost cooked.add salt too and stir properly. let it cook for 3 more minutes,then switch of the flame.finally you can   add lemon juice on it.serve this with hot plain rice , also go well with chapatti's.
