Avial(Mixed vegetable Curd Sambhar)

This is special type of sambhar or you can say a side dish for rice.This is one of the recipes in which you can put as many vegetables as you want.My mother and my grandmother prepares this dish very tasty.This is a very  nutritious and healthy sort dish  and a nonspicy type.here in USA i use whatever suitable Fresh vegetable avilable for this dish.
Ingredients:
  • 1 small semebadnekai(chayote squash) cut into medium/lengthwise pieces
  • 1/2-1 potatoes cut lengthwise
  • 1/2 cup French beans cut lengthwise
  • 1/2 cup carrot lengthwise
  • 1/2 cup Drumsticks
  • 1/4 cup peas
  • and many other vegetables according to your availablelity like yam,thondekai(tindora),etc
  • 1cup fresh grated coconut
  • 4-6 green chilies
  • coriander leaves
  • salt
  • 1 cup curd
  • 1 tsp rice flour(optinal)
  • 2tsp Jeera(cumin seeds)
  • seasoning
  • curry leaves
  • 2 tsp ghee
  • 1 tsp mustard seeds
  • hing
  • red chili pieces
Method:
Wash,clean and cut all the vegetables.
Cook this vegetables together in pressure cooker or microwave adding little salt and 1 split cut green chili.

Grind coconut,cumin seeds,coriander leaves and green chilies together in blender into smooth paste.add curd instead of water to grind this paste.If you are using frozen coconut then add hot-warm water while grinding/make coconut warm by keeping it in microwave for few seconds.
Take a wok,add all cooked vegetables,salt and the grounded paste.Stir them properly.Let them simmer for 3-4 minutes stirring in between.don't boil too much otherwise coconut will separate from liquid.
If you feel gravy is very liquid you can add rice flour blended with water.switch off the flame.
Take a pan add ghee and all seasonings.when mustard start spluttering add this on the above Avial.If you
want add 1 tsp coconut oil on it.Serve hot with hot plain rice.
