Spicy Brinjal coconut sambhar

This is a little spicy sambhar,which is a very good side dish for shavige.this goes well with rice too.
Mangalore brinjal is best for this but here in USA you try it as always do substitute brinjal with capsicum mixed with little zucuni.if you get indian brinjal you can do it with brinjal .

 Ingredients:
  • 3-4 medium size brinjal/1 big capsicum and 1/2 zucuni(cut into medium size cubes)
  • 1 tsp tamarind  paste
  • 1" jaggery piece
  • salt to taste
  • 1/2 tsp turmeric powder
  • 2 "ginger
  • 3-4 green chili
  • 1/2 cup fresh grated coconut
  • 1/2 cup cooked toor dal
  • oil
  • 1/2 tsp mustard seeds
  • 1/2 urad dal
  • 1 red chili pieces
  • pinch of hing
  • curry leaves
  • coriander leaves
Method to prepare sambhar:
in a sambhar pan put oil mustard seeds,urad dal ,red chili,hing and curry leaves.when mustard seeds start to splutter add brinjal/capsicum and zucchini and turmeric powder ,one green chili cut length wise and jaggery.
Cover the lid of the pan and let the vegetables cooked in low flame for 5 minutes. keep stirring in between .
By that time grind together remaining green chili,ginger and coconut into smooth paste.
when the vegetables are 3/4 cooked add tamarind paste ,little water and salt .cover the lid let the vegetable cook completely.
now add cooked Dal and  coconut masala.let it boil for 5 more minutes.here you can skip adding toor dal instead add little more coconut .i like to eat this with little coconut oil sprinkle on it.Goes very well with rice and also rice shavige.
