Akki(Rice Flour) Roti [Karnataka Cuisine Special]

                                                                                                                
                                                                                                          
This one of the famous Breakfast dish which people from Bangalore -Mysore do at home often.you need some particular technique and a bit practice to prepare thin,crispy-soft(that means perfect)rotti.I came a long way  and  now i am little better in making good ones.This takes little time to cook,but everybody in my house loves it.My daughter like it very much with just benne(butter).
Ingredients:

  • 2 cup Rice flour 
  • 1 1/2 cup water
  • salt
  • oil
  • 1/2 big onion finely cut
  • coriander leaves finely cut
  • 1 grated carrot
  • 1-3 green chili
  • 1" ginger
Method:
In a pan boil water ,put salt and little oil in it.when water start boiling add rice flour and mix it immediately.



Stir continuously so that lumps won't be formed.
when it becomes like a ball,switch off and keep aside to cool off.
Some just pour the boiling water on the flour and water cool off knead the dough.
 By that time cut onion and all veggies.
when the dough is cooled add all other ingredients and knead it properly.
make small balls from the dough.

Pat it with you hand using little oil on the aluminium sort of plastic paper.I use greased nestum baby food cover,can use chips cover also.
Heat the griddle ,when it is hot put one tsp of oil at the centre ,spread little.then put that sheet on the griddle.
after few seconds try to lift it off,if dough is perfect it comes off just like that.

If dough is sticky then try to pull it with the help of flat ladle.
Some people Pat the rotti directly on the griddle,but for this the best way is to do is ,every time you have to put the griddle below the running water and then Pat next rotti.

when rotti is cooked both sides ,remove it from griddle and serve this with Green chutney and butter.
