Vermicelli upma [Karnataka Cuisine Special]

This is one of  the healthy,tasty and easy breakfast/snack,wThis is one hich is quite a filling too.we can make
it 3-4 types and all tastes good.
Ingrediends:
  1. 2 cup roasted/plain Vermicelli
  2. 1/2 big onion
  3. 1 cup of mixed veggies(carrot,peas,beans,capsicum finely chopped)
  4. 1" ginger
  5. 1-2 green chillies
  6. 1/2 tsp turmeric powder
  7. 1 tsp gram masala/sambhar powder/vangibhath powder
  8. salt
  9. 1 tomatoes
  10. oil
  11. 1/2 tsp mustard seeds
  12. 1/2 tsp urad dal
  13. 1/2 tsp cashew pieces
  14. 1 red chili
  15. curry leaves
  16. coriander leaves
  17. 1/4 cup fresh coconut(optional)
  18. lemon juice
 1st Method:
Roast Vermicelli (if the Vermicelli is plain type ) adding 1tsp of ghee.
When the Vermicelli becomes light brown color remove from the pan and keep aside.
In the same pan take 1tsp ghee and 1 tsp oil.when the oil becomes hot add seasoning ingredients.when mustard start spluttering add onion,capsicum ,ginger,green chili and turmeric powder.
Fry till onion turns light brown.now add all the cooked veggies,tomatoes and salt... Fry for one more minute..


Add above any one  Masala and stir it properly.. There are two methods of cooking vermicelli..
Method A: Boil water and add little salt, oil.. when water starts boiling, add roasted vermicelli..
cook for 3 minutes (or till vermicelli is cooked). switch off and sieve  - remove the water..
This cooked vermicelli can be added directly to the above mix.


Method B: Boil water,add little salt and keep it ready...you can cook the above  vegetables in this water.add roasted vermicelli into the above mix and then add the boiled water into it.keep stiring in between and allow the vermicelli to cook.  


Finally add grated fresh coconut ,lemon juice and mix it properly. switch off and add coriander leaves.




2nd Method:
You can also prepare this like lemon rice.For this there is no need to add any masala,you can increase little quantity of green chili instead.replace cashews with ground nuts.adding capsicum and onion is optional,but there is no need of adding any veggies and tomatoes.rest of all the recipe is the same.

3rd Method:
This is our Mangalore style,for this there is no need of any onion,capsicum,tomatoes and veggies.we have to prepare our own masala instead of any of the above masala.for the masala we need to dry grind coconut,3-4 red chillies  and 1/4 tsp mustard seeds.add seasoning,then add cooked vermicelli,salt and little jaggery.Now add the ground masala and lemon juice. mix it properly.add coriander leaves finally.




I prefer the first method often as lot of veggies is added in it .As you can see in all my cooking i like to use  lot of veggies.
